Omni Riverfront Hotel Names Brett Breaux as Executive Chef

NEW ORLEANS (March 12, 2015)Omni Riverfront Hotel, has named Lafayette-native Brett Breaux as executive chef of the newly opened French-inspired bistro, Fulton St. Bistro | Bar. Breaux, who has culinary experience at the helm of other notable New Orleans hotel restaurants, brings an extensive French Cajun cuisine background to the restaurant from his time as chef/owner of his family’s renowned Cajun restaurant Café des Amis in Breaux Bridge and as general manager at Prejean’s Restaurant in Lafayette.

The only Parisian-influenced restaurant with a gin bar in New Orleans, Fulton St. Bistro | Bar (formerly 7 on Fulton) offers French Press coffee, freshly baked baguettes, fresh French pastries from Laurel St. Bakery, authentic salads and sandwiches and delicious steaks and seafood. 

“Brett’s Cajun influence has added a new dimension to our French bistro menu. We’re delighted to welcome a chef of this caliber to finesse this culinary fusion,” said Ramon Reyes, general manager of the Omni Riverfront Hotel.

 

Breaux’s more than 15 years of culinary experience includes two years at Hilton New Orleans Airport Hotel, where he progressed from sous chef to executive chef; Ritz-Carlton Amelia Island, Fla.; Ritz-Carlton New Orleans; and Windsor Court New Orleans, where he served as executive chef for the hotel’s catering operations and eventually executive chef over the Windsor Court and its flagship restaurant, New Orleans Grill Room. Most recently, Breaux served four years as co owner/operator and chef de cuisine at Café des Amis, alongside his father Dickie Breaux. He earned his culinary degree from Delgado Community College’s Culinary Arts program. 

 

Reminiscent of a vintage street bistro, the relaxed atmosphere at Fulton St. Bistro | Bar is the perfect location for social gatherings, group happy hours or as a destination to unwind after a long day. The restaurant’s specialty gin bar and cocktail menu features classic New Orleans cocktails such as the Ramos Gin Fizz, a Riverfront Gimlet, and its rendition of the French 75 champagne cocktail. An extensive selection of wines by the glass and locally brewed and imported beers are available as well. The bar features a unique assortment of gins including The Botanist, Death’s Door, Glorious Gin, Tanqueray, Hendrick’s, Plymouth and Nolet’s, and recommended tonic waters to accompany them such as the classic Jack Rudy’s Tonic Elixir and a botanical Fever Tree Mediterranean Tonic Water.
